Ground Turkey Dinners


A protein source that I think is underrated is ground turkey. I grew up eating ground beef and it never agreed with my stomach and I wasn't a fan of the strong flavor. I also did not like the texture of ground meat for a number of years and refused to eat it. Within the last 2-3 years I have started eating ground turkey because it has a milder taste than ground beef. Since doing so I have developed a number of different recipes that I make with ground turkey. This post includes a variety of different ground turkey dinners that are sure to impress. All the meals are simple to make and require minimal ingredients. 

All meals are milk free, gluten free, and lower in carbs/starches. 

Eggroll in a Bowl

Eggroll in a bowl is the perfect dinner because it combines vegetables and protein into one easy dish. The three main ingredients for eggroll in a bowl are green cabbage, ground turkey, and zucchini. For the sauce and seasonings I use gluten free soy sauce or tamari, salt, black pepper, sesame oil and ground ginger. The first step is to brown the turkey with half of the sauce and add salt and pepper to taste. Depending on how lean your meat is you may or may not have to drain off the grease before adding the vegetables. After chopping the cabbage into bite-size pieces and the zucchini into half moons add to a wok or sauce pan along with the rest of the sauce. Sauté until the cabbage is cooked to your liking.

This dish is great for meal prep and can be portioned into 4-5 servings.

If you are not low fodmap you could add green onions/spring onions or a yellow onion as well.


Turkey Hash

This next dish is a hash meaning that you basically cook everything together in a sauce pan on the stove. This dish is great because you can use different vegetables to make it taste different each time. The combination that I recommend is 1 lb of ground turkey, 2 bell peppers (I prefer red, yellow or orange), and 1 zucchini or summer/yellow squash. An optional addition is an egg, but that really depends on if you are serving it over rice or not. When I don't serve this meal over rice I like to use salt, pepper and Italian seasoning. When I do serve it over cauliflower rice I like to season with taco seasoning.

This dinner can also be meal prepped and serves 3-4.

Turkey Burgers

For so long I was someone who could not eat ground meat because of the texture. I do not like the taste of beef so ground turkey is the best option for me when I want to make a burger. This burger recipe is so simple to make you won't even believe it. All you need a 1 lb of ground turkey, 1 egg, salt, pepper and poultry seasoning. In a bowl mix together the ground turkey, egg, salt, pepper and poultry seasoning. Form the mixture into four patties and either grill on a George Foreman or in a pan on the stove. For the sides of this meal I like to make carrot fries. For that all you need is a bunch of carrots (5-6), olive oil, salt and pepper. Peel and cut the carrots into thin fries and toss in oil, salt and pepper. Bake in the oven for 10 minutes on 425 F and then flip them and bake for another 10 minutes. I also like to add a pickle and steamed corn or broccoli on the side. Both the carrot fries and turkey burger reheat well in the microwave. You could also reheat the carrot fries in an air fryer.

1 pound of ground turkey makes 4 turkey burgers.



Turkey Taco Salad with Fajita Style Peppers and Onions

How I cook my ground turkey is I brown it in a skillet with olive oil and Fody Taco Seasoning. If you want to learn more about Fody products check out My Favorite Fody Foods Products and How I Use Them. Once the ground turkey is mostly browned add two peppers and half an onion to the skillet along with more seasoning. Cook until your desired softness. To assemble the turkey taco salad add leafy lettuce, the turkey, peppers, onions, avocado, and pico de Gallo or your favorite salsa. I love a good corn salsa in addition to a tomato based salsa. You can also add any of your other favorite taco toppings. I personally buy one avocado and use one fourth of the avocado for each taco salad. I store the rest in a reusable silicone bag in the fridge. 

This makes 4 servings.




Low Carb Turkey Meatloaf 

I based my meatloaf recipe off of was Primavera Kitchen's Turkey Meatloaf. The adjustments that I made was no garlic and Italian seasoning/dried herbs instead of fresh because that is what I had on hand. I also found that half an onion was enough in my opinion. Lastly if you want a more complex sauce than just sugar free ketchup I mixed together 4 tablespoons of tomato paste, 3 tablespoons of sugar free ketchup, and a tablespoon of soy sauce. I also chose to make this more meal prep friendly and made meatloaf muffins. To do this divide the meat mixture into a lined muffin tin, I used silicon muffin liners, and bake for 15 minutes, then add some of the sauce to each muffin and bake for another 10-15 minutes. Check to make sure the meat is cooked through. I used 1 lb of ground turkey and it made 10 meatloaf muffins. I served this a side of roasted asparagus and a steamed vegetable.

Korean Turkey 

This Korean Turkey dinner is from Sweet Peas and Saffron. Once again I made some adjusts to the recipe. I omitted the garlic and red pepper flakes. As I do not eat starch so I did not serve this over rice. I also used a whole pound of ground turkey instead of the recommend 3/4 lb. Since I substitute rice for riced broccoli and cauliflower I chose to have the vegetable be zucchini and summer squash instead of broccoli. I used one zucchini and one summer squash. To make this dinner you simply mix together the sauce, brown the meat, add the sauce and vegetables and cook until the vegetables are tender.

1 lb of ground turkey made 5 servings.
